Teaching you some of Joy of Taste’s most loved Canapés the techniques & tricks to produce original, individual and exceptional delights and some amazing botanical cocktails to really add some fun.
This school will incorporate 6 different Canapés that you are able to prepare ahead of your guests arrival, and allow you to wallow in the praise:
Duck confit wraps with spiced berry, cucumber, spring onion, crispy skin and chive tie
Rare roast beef skewers with truffled hollandaise cream and inoki mushroom
Wild mushroom pastry towers with tarragon and pecorino trim
Citrus cured salmon on a sourdough blini with lime pickle crème fraiche and apple caviar
Sushi tuna burgers with wasabi mayonnaise and pickled ginger
Shallot Pancake with Garlic & Green Olive Tapenade
To accompany we will be mixing some botanical cocktails to shake and stir such as Honey blossom- Vodka and orange blossom-flavoured water are stirred together with homemade sage-honey syrup, then served straight up with a touch of Fino Sherry and Sonic bloom- Homemade lavender syrup and dandelion and burdock bitters form the flavour foundation which is topped off with champagne or prosecco. And off course it would not be complete without a mojito with a twist- lemongrass and kaffir infused with passion fruit and a touch of chilli.
