Inspired by the foods of the Middle East, you will make the following mouth watering dishes during a class which will form part of your lunch menu. At the end of each course there will be a chance to discuss the day’s learning with the Chef and your fellow students over a glass of wine.
Bastilla- slow cooked chicken in a saffron honey tomato sauce with almonds encased in filo and dusted with icing sugar
Jewelled Persian basmati rice- cooked to perfection with a golden crust with barberries, pistachios, raisins and cardamom
Seafood, fennel and lime salad with sumac
Stuffed aubergine with lamb and pinenuts
Home made Flat breads served with butternut and tahini spread, feta mash and an olive and parsley salad
Mangoes with orange-blossom syrup and sweet labneh
