Certain pasta’s require an al dente texture (a slight bite to the pasta) whilst others require a soft dough. Raviolis, lasagnes, tortellini are all perfect for this, ready to encase the most perfect of fillings. The combination of creamy pumpkin with crunchy pine nuts and sweet roasted garlic will form the filling of our hand-made raviolis to be finished with brown butter and crispy sage.
There is an art to a perfect risotto there is the amount of moisture to consider too much and it will be sloppy too little and it will be dry and then the cooking of the rice itself needs to be timed to allow the plump grains to be full of flavour and moisture without a hard interior or overly soft interior. Timing and temperatures are key to the perfect risotto. Add sea bass cooked to perfection a stock from mussel liquor and this unforgettable dish is formed.
