Flavours of the Far East

This class offers a fusion of Asian recipe incorporating where possible local and seasonal ingredients. We will also talk about the fifth taste element umami and learn how to incorporate the flavours for enhanced every day cooking.

We will prepare such delights as Wagyu and foie gras rolls with spicy miso, sea scallop with lemonade fruit and yuzu, fillet of sole salad rice paper rolls- Succulent warm deep fried pieces of sole with spiced mayonnaise are rolled with cucumber strips, grilled chicken Khmer style, blackened miso marinated cod, sin sin salad Thin strips of crunchy revitalising green mango, red and yellow peppers, cucumber celery and glass noodles all bathed in a lemongrass, kaffir lime leaf and ginger dressing, sprinkled with garlic, chilli and a nut frizzle, mangosteens with lychee granite ice cream coconut cream and meringues.
