Chia Crackers

I love a cracker that’s as good for you as it tastes. These are a perfect balance of protein, carbs, and fiber, with nutritional yeast adding a subtle cheesy flavor. Chia seeds bring a satisfying crunch along with a healthy boost of omega-3s.

Prep Time: 15 minutes
Servings: 10

Ingredients:

  • 2 ½ cups almond flour

  • ½ cup chia seeds

  • 1 cup celery, chopped

  • ¼ cup water

  • 1 tbsp extra virgin olive oil

  • 1 tbsp miso paste

  • 1 tbsp nutritional yeast

  • Sea salt & black pepper, to taste

Instructions:

  1. Preheat oven to 350°F (176°C).

  2. In a large mixing bowl, combine the almond flour, chia seeds, and nutritional yeast.

  3. In a blender, combine the celery, water, olive oil, and miso paste. Blend until smooth.

  4. Add the wet mixture to the dry ingredients. Knead by hand for 1–2 minutes, then shape into two compact logs.

  5. On a silicone mat or parchment paper, place a log and grease a rolling pin. Roll out until about 3 mm thick. Score into squares with a pizza cutter or knife.

  6. Bake in the center of the oven for 18–22 minutes, or until golden. Let cool on the baking tray before snapping into squares.

  7. Store in an airtight container for up to two weeks.
