Goji, Macadamia & Chia Granola

With just the right amount of crunch, this granola is a real treat. The orange adds a subtle sweetness, but overall, it's more on the savoury side—which really lets the nutty and seedy flavours shine through.

When I’m after a protein-packed breakfast, I love pairing it with Greek yoghurt, a scoop of protein powder, and a handful of berries.

Goji, Macadamia & Chia Granola

Ingredients

  • 300g Oats (preferably rolled)

  • 200g Sunflower Seeds

  • 200g Pumpkin Seeds

  • 100g Sesame Seeds

  • 100ml Orange Juice (zest and juice of 1 orange)

  • 50ml Coconut Oil

  • 100g Macadamia Nuts

  • 50g Chia Seeds

  • 100g Goji Berries (or dried tart cherries)

  • 2g Sea Salt

Directions

  1. Mix & Bake:
    Combine the first six ingredients (Oats, Sunflower Seeds, Pumpkin Seeds, Sesame Seeds, Orange Juice, and Coconut Oil) in an oven tray.
    Bake at 160°C for 25 minutes.

  2. Cool:
    Turn off the oven after 25 minutes and let the granola cool down in the oven to retain crunch.

  3. Finish:
    Once completely cold, add the remaining three ingredients (Macadamia Nuts, Chia Seeds, Goji Berries, and Sea Salt). Mix well.
