Nectarine, Tomato & Mozzarella Salad
Nectarine is really the star here because it brings together the flavour of the tomatoes by adding a touch of sweetness and then the pomegranate molasses adding a sweet sharp note and the pepperiness of the basil - this really elevates this salad - I like to go for a buffalo mozzarella which is much creamier and has more flavour that some of the mozzarella you can buy!
Tomato, Nectarine & Mozzarella Salad with Pomegranate Dressing
Ingredients (2 servings):
15 milliliters Extra Virgin Olive Oil
5 milliliters Pomegranate Molasses
4 grams Raw Honey
Sea Salt & Black Pepper (to taste)
2 Nectarines (pit removed, sliced)
224 grams Cherry Tomatoes (halved)
250 grams Mozzarella Ball (torn into pieces)
5 grams Basil Leaves (sliced)
40 grams Rocket Leaves (arugula), washed and dried
Directions:
In a small bowl, whisk together the olive oil, pomegranate molasses, and honey. Season with salt and pepper.
Place the nectarine slices, tomatoes, and rocket leaves onto a serving dish. Add the mozzarella. Drizzle the dressing over the top and garnish with basil.
Divide between plates or bowls and enjoy immediately!
