Dark Chocolate espresso cashew truffle

There is something moody and opulent with this combination as the bitter notes intertwine harmoniously. The addition of cashew lends a delicate touch of protein to this delightful chocolate indulgence. Enriched with antioxidants, these ingredients actively combat free radicals. Free radicals, generated through metabolic processes or encountered in the environment, can induce oxidative stress, potentially leading to a range of health complications over time. This decadent yet healthful chocolate treat offers a symphony of flavours. Just one or two of these treats are ample to satiate chocolate cravings, all while ensuring nutritional balance.

Ingredients:

1 double shot espresso

100g cashew butter or almond butter

200g quality dark chocolate (at least 70%, more if you like it bitter)

Pinch of sea salt

8 pitted medjool dates (soaked in the espresso for 30 minutes)

N.B. if you desire more sweetness add a tablespoon of maple syrup

Cacao powder to finish

Method:

1/ Begin by melting your chocolate - this needs to be done gently in a non metal bowl over a pan of barely simmering water melt chocolate – stir very gently with a rubber spatula as soon as it is melted remove from the heat.

2/ In a blender add all of the ingredients until a creamy mix is formed. Some water may need to be added as the mixture may get dry add a tablespoon at a time until the desired truffle texture is achieved.

3/ Scoop a generous teaspoon of the mixture at a time and roll in cacao powder before refrigerating in a container.

These will last for a few weeks.
